OUR STORY

The Jax Shack is more than just a restaurant and catering company—it’s a family dream brought to life. Founded and operated by high school sweethearts Tony and Amanda Bedford, The Jax Shack was named after their son, Jax, who inspired their journey into the world of cheesecakes and catering.  The Jax Shack is deeply rooted in Faith, Family & Friends. Their faith in God is the foundation of everything they do, and they strive to let His love and guidance shine through The Jax Shack and the way they serve others.

Their story began over a decade ago with catering as Tony & Amanda loved working together while sharing their passion and love for food and food service.  When Amanda was pregnant with their son Jax,  she began craving cheesecakes, so Tony decided to bake a few cheesecakes to satisfy Amanda’s cravings.  What started as a passion project quickly grew into something much bigger, Bedford's Cheesecakes. Today, cheesecakes remain the heart of The Jax Shack—crafted in small batches, made with premium ingredients, and baked with love. Each cheesecake is more than dessert—it’s a piece of their family’s story.

Tony brings a bachelor’s degree in Food Science and Nutrition, several years of restaurant experience, and a background as a culinary arts teacher.  Amanda, with her warm smile and big heart, shines in the front of house and manages catering with the same care she once gave to her kindergarten students during her 10 years in education. Together, they took a leap of faith—leaving the classroom behind to follow their dream of building a restaurant that blends food, family, and community.

On November 17, 2023, they opened the doors to their brick-and-mortar restaurant and catering kitchen in their hometown of Homer, Georgia. Since then, The Jax Shack has become a place where guests feel at home, savor delicious meals, and celebrate life’s milestones with food that’s made from the heart.

In December 2025, Tony and Amanda welcomed their daughter, Ava Jane Bedford, completing their family and inspiring them even more to build a legacy rooted in love, passion, and good food.
